Shrimp avocado salad recipe

We could live off this Shrimp Avocado Salad. It tastes crazy good! It’s also really pretty served as a chopped salad.

Yields2 Servings

 1 pound cooked shrimp (peeled and deveined).
 1 cup fresh lime juice.
 1 teaspoon of Nutriology MCT Oil.
 Salt and pepper.
 1 medium avocado (pitted and diced).
 1 small tomato (diced).
 ¼ cup diced red onion.
 2 tablespoons fresh chopped cilantro.
 1 jalapeno (seeded and minced, optional).

Chop the shrimp into bite-sized pieces.

Whisk together the lime juice, MCT Oil, salt, and pepper in a bowl.

Toss in the shrimp, avocado, tomato, red onion, cilantro, and jalapeno.

When well combined, cover and chill until ready to serve.
